Healthy Breakfast Muffins

I was inspired on my recent trip to Ibiza to bake some healthy, clean treats! ??❤️
I spent most days on holiday eating from a beautiful, raw deli which filled me with the most nutritious, tasty food! It certainly helped me on those delicate mornings after one too many cocktails the night before- Ouch! 😉

These Breakfast Muffins are filling, sugar/dairy/gluten free & can be used as breakfast or as a snack 🙂 They are full of good fats, vitamins, protein and fibre. ENJOY!

 

2 tbsp olive oil
5 eggs
Pinch of himalayan salt
2tsp cinammon
2tbsp honey if desired
Cup of almonds, walnuts, hazelnuts, dried cranberries/raisens, pumpkin seeds, sunflower seeds and sesame seeds.

Place walnuts in blender and blend for a few secs, this gives a crunchy nut flour, repeat with almonds & hazelnuts. Pour all 3 nut flours into a bowl with the rest of the ingredients.
With a tablespoon scoop up the mixture into muffin molds.
Bake in oven, 170, for 25 minutes!

Enjoy with a cup of your favourite tea or coffee 🙂
